Epicure's Stir-fried Vegetables with Almonds

Ingredients

  • 1 Tbsp (15 ml) vegetable oil
  • 1 large carrot, cut in half lengthwise, then thinly sliced on an angle
  • 2 ribs celery, cut into ¼" (0.6 cm) slices
  • 1 medium red bell pepper, thickly sliced
  • 1 medium onion, cut in half, then sliced
  • 1/2 cup (125 ml) whole almonds
  • 1 Tbsp (15 ml) Epicure’s Teriyaki Rub
  • 2 cups (500 ml) sliced mushrooms
  • 4 cups (1 L) coarsely chopped Chinese cabbage (bok choy)
  • Epicure’s Sea Salt, coarsely ground, to taste
  • Epicure’s Black Pepper, coarsely ground, to taste

Instructions

1. Heat a Epicure's Eclipse® Coated Wok or Epicure's Eclipse® Coated Professional Frying Pan over medium-high heat. Add oil and swirl to coat pan.
2. Quickly stir-fry carrot, celery, pepper, onion and almonds. Sprinkle with Epicure's Teriyaki Rub. Add mushrooms and cabbage. Stir for approximately
5 minutes, or until cabbage is wilted.
3. Season with Epicure's Sea Salt and Epicure's Pepper and serve hot.
