Epicure's Quick Everyday Biscuits

Ingredients

  • 1 3/4 cups (430 ml) all-purpose flour
  • 1 Tbsp (15 ml) Epicure’s Baking Powder
  • 1 tsp (5 ml) sugar
  • 1/2 tsp (2.5 ml) salt
  • 1/3 cup (80 ml) cold vegetable shortening
  • 3/4 cup (180 ml) skim milk

Instructions

1. Preheat oven to 450° F (230° C).
2. Whisk first 4 ingredients in a large mixing bowl.
3. Cut in shortening with a pastry blender or 2 knives until mixture resembles coarse crumbs.
4. Make a well in the centre and pour in milk. Immediately stir dry ingredients into the centre until a rough dough results.
5. Scrape out onto a lightly floured surface. Gently knead for 30 seconds, folding the dough over on itself then pat it out to a
¾” (2 cm) thickness. Using a 2 1/2” (6 cm) cookie cutter, cut out 8 biscuits, using up all the dough.
6. Arrange on a Epicure's Parchment-lined baking sheet and bake for 12 – 15 minutes, or until lightly golden

Sweet Biscuit Additions
Simple Sweet: Increase sugar to 2 Tbsp (30 ml). Glaze with cream or melted butter and a sprinkle of sugar before baking.
Crystallized Ginger: Add ¼ cup (60 ml) finely diced Epicure's Crystallized Ginger and ¼ tsp (1.25 ml) Epicure's ground Nutmeg. For the ideal flavour
complement, serve with marmalade, cheddar cheese and a bracing cup of Epicure's Victorian Afternoon Tea.
Summer Berry: Replace sugar in the Simple Sweet recipe with Epicure's Summer Berry Fruit Dip Mix. Ideal for berry shortcakes.
White Belgian Chocolate and Epicure's Cherries & Berries: Add ¼ cup (60 ml) of each and glaze with cream and a sprinkle of sugar before baking.
Cinnamon and Raisin: Add 1/3 cup (80 ml) raisins and ½ tsp (2.5 ml) Epicure's ground Cinnamon. Brush with milk and a sprinkle of sugar before baking.
Add orange zest for bright, citrusy flavour and aroma.

Savoury Biscuit Additions
Simple Savoury: Add 1 Tbsp (15 ml) of your favourite Epicure's Dip Mix for a delicious savoury biscuit to serve with soups, stews and chili.
