Epicure's Best Bran Muffins

Ingredients
- 1 cup (250 ml) all-purpose flour
- 1 1/2 tsp (7.5 ml) Epicure's Baking Powder
- 1/2 tsp (2.5 ml) baking soda
- 1/2 tsp (2.5 ml) salt
- 1/4 cup (60 ml) butter or shortening
- 1/2 cup (125 ml) brown sugar
- 1/2 cup (125 ml) molasses
- 2 eggs, beaten
- 1 cup (250 ml) skim milk
- 1 1/2 cups (375 ml) bran
Instructions
1. Preheat oven to 400° F (205° C).
2. Lightly spray or brush Epicure's Professional Muffin Pan with vegetable oil.
3. Whisk first 4 ingredients and set aside.
4. Cream butter or shortening and sugar in a separate bowl. Stir in molasses, eggs, milk and bran.
5. Using a spoon, combine dry and wet ingredients in swift strokes. Spoon into prepared Muffin Pan. Bake 15–18 minutes.
Dark, rich, and full of fibre and flavour! Makes a great breakfast or a nutritious snack.

Tips: Dress it Up! Try these delicious additions:
• Blueberry: Add 2/3 cup (160 ml) frozen blueberries and 1/2 tsp (2.5 ml) Epicure's Nutmeg (ground)
• Raspberry Coconut: Add 1/2 cup (125 ml) each of raspberries (fresh or frozen) and shredded coconut, and 1 tsp (5 ml) almond extract
• Ginger: Add 1/4 cup (60 ml) finely diced Epicure's Crystallized Ginger and 1 tsp (5 ml) Epicure's Pumpkin Pie Spice
• Apple: Add 1 cup (250 ml) diced apple and 1 tsp (5 ml) Epicure's Apple Pie Spice
• Raisin: Add 1/3 cup (80 ml) raisins and 1 tsp (5 ml) Epicure's Cinnamon (ground)
